Well, Ladies and Gents, it's almost my favorite time of year! 
The big game is just weeks away and I am dying to see who wins.... Ok... not really. 

What I am dying for is a day to sit on my butt with my husband and friends and indulge in every single game day food, treat and drink imaginable. (Not that I really need an excuse to eat.. but that's neither here nor there. )

Today I'm sharing a recipe that I love! It is so simple. And will make you look like a boss when you show up at any game day party. (Pro-Tip: It's also great for Showers & Pot Lucks).

I present to you a twist on Louisiana's Favorite Sandwich. Muffaletta Pasta Salad. This was adapted from an amazing Emeril recipe, using ingredients that were more readily available to me.

Super Bowl Party Recipe Muffaletta Pasta Salad


Muffaletta Pasta Salad Recipe:


Ingredients


Pasta:
1 pound of pasta
1/2 pound salami, diced
1 pound provolone, diced
1/2 pound bologna, diced
1/2 pound boiled ham, diced
6 oz. can of Lindsay Sliced Olives
10 oz. jar of Lindsay Manzanilla Sliced Olives with Pimientos
1/2 cup minced yellow onions
1 tablespoon minced garlic
1/2 cup chopped celery
1/2 cup chopped fresh parsley leaves
1/4 cup fresh thyme leaves

Dressing:
1 cup extra-virgin olive oil
6 tablespoons apple cider vinegar
1 teaspoon Worcestershire sauce
Sriracha or Hot Sauce to taste (I use just a few drops)

Garnish:
1/4 cup green onion, sliced thin
1/4 cup Parmesan

  • Toss all of the pasta ingredients together in a large bowl. 
  • Whisk the Dressing ingredients in a small mixing bowl.
  • Add salt and pepper to taste.
  • Toss the pasta in Dressing.
  • Cover and refrigerate over night.
  • Garnish with Green Onion & Parmesan.

  5. Having lived in Mobilr,AL and spending time in New Orleans, I came to love the muffaletta sandwich. When I was diagnosed with Celiac disease I figured those days were over. This salad looks like it has all the great flavors without the gluten. Thanks for the recipe!
